I’m going away to the South of France on Sunday… What sun protection factor do I need?

I'm going to the Mediteranean for a week with my friends. We're staying on the beach, so I'll be out in the sun all day, everyday. my parents are Spanish so I have naturally tanned skin. my hair and my eyes are very dark brown. Which spf do I need depending on my colouring and where i'll be going? do you think I should use a higher spf first, then go lower as the week goes on?
